Dr Peter Molan, MBE, Associate Professor in Biochemistry at The University of Waikato, Hamilton, New Zealand, has since 1981 researched the properties of honey.
In 1981 research at New Zealand's Waikato Honey Research Unit discovered some strains of the New Zealand manuka bush honey contains an extraordinary, naturally present, very stable property not found in any other variety of honey.
This unique attribute is over and above the usual qualities of honey and sets Manuka Honey from New Zealand apart as one of nature's true wonderfoods.
The special property comes from the nectar of some manuka flowers. But this special unique property is not in all manuka honey.
The quality trademark UMF (Unique Manuka Factor) is a trademark identifying Manuka Honey that has the special unique attributes. The quality trademark UMF and its level clearly displayed on the front label identifies manuka honey that has the special unique property. The higher the UMF grading the greater the presence of this property in the honey.
